The website is the documentation
This site exposes the system behind Tenon: what we make, what goes in, how it's prepared and assembled, and what it delivers. More importantly, it lets you reproduce it.
TEN-100 · Philosophy
Tenon is not simply a café. It is an open-source functional food and beverage system, with a small physical café as its laboratory and public demonstration space.
The name
Section A–A
A mortise-and-tenon joint is one of the oldest connections in joinery: a tongue cut on one member fits a slot cut in another. Done properly, it holds for centuries without glue or fasteners.
It works because it follows rules. The tenon is a third of the stock's thickness and as long as the mortise is deep. Nothing is decorative; every dimension has a reason.
We build food the same way. Deliberate ingredients with measured nutrition, joined through repeatable preparations, assembled into products with published specifications.
Specification
Food and drinks must be genuinely enjoyable. Function never excuses a bad cup.
Every build is engineered around three levers: protein, fibre and micronutrients.
No unnecessary additives, fillers or flavour complexity. Whole foods wherever possible.
Recipes, ingredients, specifications, preparation methods and sourcing are all published.
Anyone should be able to replicate, adapt and improve what we make.
We explain what goes into a product and how it works, not vague wellness claims.
Openness
This site exposes the system behind Tenon: what we make, what goes in, how it's prepared and assembled, and what it delivers. More importantly, it lets you reproduce it.
We publish nutrient amounts and where every value comes from. Unknown values are marked unknown, never zero. We don't make wellness claims; the data speaks for itself.
Recipes and data are licensed CC BY-SA 4.0. Clone the data repository, change a base or a quantity, and publish your version.
